Oh my!! I could not believe how delicious these turned out, I had to SHARE!!
– 1 1/4 cup granola (I used Nutless granola but omitted the Craisins) Pretzels would be good here too
– Pinch of salt
– 1/2 cup peanut butter or almond butter + 2 tbsp
– 1 tbsp coconut oil, melted
– 2 tbsp. honey
– 1 cup dark or semi sweet chocolate chips
In a microwave-safe bowl, combine 1/2 cup peanut butter and coconut oil. Heat for 20 seconds and stir to combine. Stir in the honey and set aside. In the bowl of a food processor, add the granola and salt. Pulse until ground into fine crumbs then add to the peanut butter mixture and stir to combine. Place into an 8 x 8 pan and spread into a thin layer. Next, use the same bowl and add the 2 tbsp. of peanut butter and chocolate chips. Microwave on high for 20-30 seconds and then stir. Heat in 10-second increments until all melted and combined. Add mixture to the top of the peanut butter layer and spread into a thin layer. Cover and refrigerate until hardens. Cut into squares and enjoy! How easy was that??!!
