Creamy, tangy hummus! Yum!
This is a protein packed snack you can feel good about having! My favorite way to serve is with raw veggies to add even more vitamins and minerals!
– 1 can garbanzo beans, rinsed and drained or cook your own dried garbanzo beans (use 1 ½ cups cooked)
– 2 tbsp EVOO (extra virgin olive oil)
– ¼ cup tahini (ground sesame seeds)
– 1 clove garlic
– 1 lemon juiced, 1-2 drops doTerra lemon essential oil
– ¼ cup water
– Salt and pepper to taste
In a small microwave safe bowl, place the EVOO and add the garlic. Microwave for 30 seconds. This will infuse the oil with the garlic flavor. If you only want a very mild garlic flavor, you could discard the clove. However, since it has been heated in the oil and cooked a little, the flavor is milder than raw garlic so I add it to the hummus mixture. Next, in a food processor or blender, place all ingredients and blend, pulsing until creamy and smooth. Add more lemon juice if you think it needs it. You can also add more water if it needs to loosen up in the blender. Serve with crackers, pita or veggies. Enjoy!
