So, maybe you don’t love nuts or have a nut allergy. You can still enjoy granola! I am officially OBSESSED! This is so crispy and delicious! And, the almond extract gives it an interesting and tasty twist!
– 3 cups old fashion gluten-free rolled oats
– 2 cup bran flakes
– 1/2 cup dried cranberries
– 1 cup shredded unsweetened coconut
– 1/2 cup honey or pure maple syrup
– 1/4 cup coconut oil, melted
– 1/2 cup applesauce
– 1 egg white
– 2 tsp cinnamon
– 1 tsp almond extract
– 1/2 tsp salt
Preheat oven to 325 degrees F.
In a large bowl, combine the oats, bran flakes (crush slightly in your hands to create smaller pieces), and coconut
In a separate bowl, combine honey, oil, applesauce, egg white, cinnamon, almond extract, and salt. Whisk to combine. Next, add the oat mixture to the wet mixture and stir to thoroughly combine. Pour onto a sheet pan that has been sprayed with cooking spray. Cook for 35-45 minutes or until light golden brown. Stir once about midway through the cooking process to achieve an even color. About 10 minutes before complete, add the dried cranberries and toss to combine. Continue cooking for the last 10 minutes
Remove from oven and let cool before serving. Serving size is 1/4 cup
