Breakfast Hash

Ingredients:

Veggies of your choice.  Here are some suggestions:

Onion

Peppers

Mushrooms

Sweet potato

Zucchini

Kale

Olive Oil

Salt

Pepper

Egg

Directions:

Simply chop any veggies you like, have on hand, or may be going downhill 🙂  and sauté in a small amount of olive oil with S & P. You can make a large batch of this to reheat for breakfast and then top with an egg. Other fav toppings: Saurkraut, hot sauce, Everything but the Bagel Seasoning from trader Joes. This can be made on Sunday during your prep if you like!
