Breakfast Hash

Ingredients:

Veggies of your choice.  Here are some suggestions:

Onion

Peppers

Mushrooms

Sweet potato

Zucchini

Kale

Olive Oil

Salt

Pepper

Egg

Directions:

Simply chop any veggies you like (suggestions above but nothing is off limits!). Sauté veggies in a small amount of olive oil with S & P. You can make a large batch of this on your prep day if you prefer and simply reheat for breakfast. When ready to serve, reheat veggies and add an egg on top. We love our eggs over medium! Our fav toppings are Everything but The Bagel Seasoning, hot sauce, marinated onions, fresh herbs, avocado, sauerkraut. So delish!
