Compound butters are soooo simple and Oh so valuable!   I make all sorts of these and keep them in the freezer to pull out and finish off quick weeknight meals! They can turn a meal from just average to spectacular in a flash! Takes no time and adds tons of flavor with just a small amount.  It really takes your food to the next level!  So here’s how:


– Unsalted grass-fed butter at room temperature
– Shallot (this is my favorite! I add to the top of sautéed fish for a 10-minute dinner!)
– Fresh thyme, rosemary, oregano, garlic (great for topping chicken, fish, or bread)
– Blue cheese (delicious on top of steaks or burgers)
– Lemon zest (perfect for topping fish)
– Cinnamon and maple syrup (spread over toast or onto pancakes or waffles)
– Honey (perfect for homemade yeast rolls or any bread)
– Blueberries or blackberries (top pancakes, muffins or waffles)


Take one stick of unsalted grass-fed butter and bring it to room temperature.  Add any of the above combinations along with a sprinkle of salt and pepper to the savory combinations.   Skip this step for the sweet combos although a tiny pinch of salt is great to bring out more of the sweetness.  Mix ingredients well to combine.  Next, place butter onto a piece of plastic wrap or parchment paper and roll it into a log.  Then place it into the freezer to firm up and when ready to use, slice off  in 1/2 inch pieces which will be approximately 1 tablespoon each.  Use these to add to the top of fish, chicken, pork, steak, breads, etc.  Add to vegetables after cooking for a little added flavor. Also great on potatoes and rice. The possibilities are endless!
