Ingredients

1 lb sausage

1/2 pepper, chopped

1/2 onion, chopped

1 clove garlic, minced

1/4 cup chopped mushroom, about 3-4

1/4 cup shredded carrots

1 cup chopped spinach or kale

6 eggs

1/4 cup coconut milk in can (can also use almond milk)

1/4 tsp salt

1/8 tsp pepper pepper

Directions

Preheat oven to Broil. In a medium sized skillet over medium high heat add sausage and brown. Next, add peppers, onion, garlic, continuing stir until golden brown. Add chopped mushrooms, shredded carrots, and kale or spinach. Whisk eggs, milk, s & p in a separate bowl, pour over veggies. Move veggies slightly around pan to incorporate eggs. Let cook for a few minutes on the stovetop to allow bottom to begin to set.

Transfer to oven and broil for 2-3 minutes. Top with whatever you like. Our favs are chopped avocado, garlic infused olive oil, hot sauce and nutritional yeast. Enjoy!
