Green Goddess Grilled Chicken and Veggies
4 Boneless, Skinless Chicken Breast (organic)
2/3 cup Tessemae’s Green Goddess Dressing and Marinade
3 small/medium zucchini squash sliced 1/4 inch thick lengthwise
1 bunch asparagus (chop woody ends off)
1 red onion – cut into 1/4 inch round slices
Place chicken in a plastic bag or container with a lid. Pour 1/3 cup of the marinade and a pinch of salt and pepper. Coat to combine and let marinade for minimum of 30 minutes up to 24 hours.
Place veggies in a separate bag or container and add the remaining 1/3 cup marinade and a pinch of salt and pepper. Coat to combine and let marinade for minimum of 30 minutes up to 24 hours.
Preheat grill to medium high. Place chicken and veggies on grill in a single layer. Cook until veggies are just tender and chicken done (165 degrees). Turn once half way through (after approximately 8-10 minutes).
Based on the thickness of your chicken, the veggies will most likely be done first.
Serve with a delicious side salad or baked russet or sweet potato. Enjoy!
