– 1-1.25 lbs ground beef
– 1 tablespoon grapeseed oil (olive oil is fine too)
– 1 1/2 tsp onion powder
1 1/2 tsp garlic powder
– 1 tsp smoked paprika
– 1 Tbsp tomato paste (you can omit if you don’t have it)
– 1 tsp kosher or sea salt
– 1/4 tsp black pepper
– 4 cups or one box of beef stock (broth)
– 1/2 package whole grain egg noodles or fusilli brown rice and quinoa noodles
– 1/2 cup 2% greek yogurt or light sour cream or ¼ block of Boursin garlic and herb cheese
– 1 1/2 cup shredded sharp cheddar cheese


Heat a medium-sized pot on the stove over medium-high heat and add the oil. Once hot, add the ground beef and brown thoroughly. Add the garlic powder, onion powder, salt, and pepper and stir to combine. Add the beef stock and then the noodles. Turn the heat to low and cook until almost all liquid is absorbed (approximately 10 minutes). Add in the yogurt or sour cream and cheese and stir to combine. THAT’S IT!! How Simple is that!! Enjoy!
