How to make the Perfect Panini (aka hot sandwich)  

Ingredients:

Anything goes here!  But here is a fav of mine:

Sliced Applegate Pepperoni

Sliced Applegate Ham

Provolone Cheese

Basil Pesto (if I do not have pesto, I use dijon mustard)

Gluten free bread such as Canyon Bakehouse

Directions:

Preheat grill pan or large skillet and coat with cooking spray over medium heat. Alternatively, you can coat outside of bread with grass fed butter. Add bread to pan. Next add filling, condiments like mustard or pesto first and if using cheese place it next followed by meat and/or veggies. Place bread halves together to make sandwiches and top with another heavy skillet. Cook 2-3 minutes on each side or until golden brown and cheese is bubbly and melted. Cut in half and serve with a side salad!
