Line a sheet tray with aluminum foil or parchment paper. Place veggies on tray. Drizzle with olive oil and sprinkle with S & P. Toss to combine and spread into a single layer.Place in oven for approximately 30 minutes or until tender and brown around the edges.Use same technique for any roasted veggie. Cooking times will vary based on which veggies you choose.
