Project Description

Ingredients:

– 2 cup whole wheat flour
– 1/2 tsp salt
– 1 tsp baking powder
– 1 tsp baking soda
– 1 cup milk (almond, coconut, and buttermilk work well, or 2% cows milk)
– ¼ cup melted coconut oil
– ¼ cup 2% greek yogurt (Fage is my personal favorite brand!)
– 1 egg
– 1 tsp vanilla extract

Directions:

In a medium-size bowl, combine all dry ingredients.  In a separate medium-sized bowl, combine all wet ingredients and whisk together.  Add wet ingredients to dry.  Heat a griddle or cast iron or non-stick skillet over medium heat.  Spray with nonstick cooking spray.  Spoon out approximately ⅓ cup of the batter onto your griddle or skillet.  Cook approximately 2 minutes on first side (until bubbles begin to form on the top of the batter) then flip and cook approximately 1 minute on the second side.  This recipe makes 8 medium sized pancakes.  Top with butter, fresh berries and pure maple syrup and ENJOY!!
