This is an amazingly tasty twist on salmon! Try it, I bet your family will love it!
– 4 salmon filets (wild caught is best) skin on or off is fine
– 3 tbsp. Dijon mustard
– 1 tbsp. honey
– Salt and pepper
– 3/4 cup pretzels (placed in a plastic bag and crushed)
– 2 tbsp. olive oil
Preheat the oven to 425 degrees. Combine mustard, honey, a pinch of salt and pepper in a bowl and mix well. Brush one side of each salmon filet with a thick coating of the mustard mixture. Sprinkle a thick layer of the crushed pretzels on top of each filet (over the mustard). Spray each filet with cooking spray just to moisten the pretzels. Preheat a cast iron or non-stick skillet over medium-high heat. Add olive oil. Place each filet (pretzel-side up) into the hot oil in the skillet. Cook approximately 3 minutes until the bottom begins to turn slightly crispy around the edges. Transfer the skillet to the oven and cook for 5-7 minutes or until the pretzel topping becomes slightly brown and salmon is just cooked through. My kids love to dip this in honey mustard! I love a squeeze of fresh lemon over top!
