– 1 cup pumpkin puree from a 15 oz can (transfer the remaining cup of puree to a plastic container and sore in the freezer until you need it) – 1/4 cup coconut oil, melted – 2 eggs – 1/2 cup applesauce – 1/2 cup pure maple syrup (can substitute honey) – 1 tsp vanilla
Preheat oven to 350 degrees
Combine all dry ingredients in one bowl. Combine all wet ingredients in another bowl. Add wet ingredients to dry ingredients and stir to combine. You could add toasted pecans and/or cranberries if you like. Place batter into a greased loaf pan or bundt pan. Bake at 350 degrees for approximately 20-25 minutes (the loaf pan will take approximately 5-10 minutes longer) or until a toothpick comes out clean. Try not to over bake. Serve warm with butter.
