This is a southern classic that can be very rich and not so great for you ? Try this simple “healthier” version that still packs all the flavor punch!
1 cup Quick-cooking grits
Salt and pepper
2 tablespoons butter
3/4 – 1 cup shredded sharp cheddar cheese
1 pound shrimp, peeled and deveined
4 slices bacon, chopped
1/2 lemon juiced
1 medium shallot, minced
2 cloves garlic, minced
Cook grits according to package instructions. Remove from heat and stir in butter and cheese.
Rinse shrimp and pat dry. Fry the bacon in a large skillet until browned and crispy. Remove with a slotted spoon and drain on papertowel. Pour off all grease except a thin coat on the bottom of the pan, add shallots and garlic and cook for 1-2 minutes then add the shrimp. Cook until shrimp turn pink. Add lemon juice and chopped bacon and stir to combine.
Spoon grits onto plate or bowl and top with shrimp. Soooo good and super simple!
