Slow Cooker Chicken and Sweet Potatoes
- 1 cup chicken broth
- 3 cloves minced or grated garlic
- 4 small sweet potatoes, scrubbed and halved lengthwise
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small bone-in chicken thighs, skin removed
In a 6-quart slow cooker, combine the chicken broth and garlic. Sprinkle cut side of potatoes with salt and pepper and place the potatoes, cut sides down, in the cooker. In a small bowl, combine the dried thyme salt and pepper. Sprinkle mixture over all of chicken to coat. Place the chicken thighs on top of the potatoes.
Cover and cook on low for 6 to 7 hours or on high for 3 to 3½ hours. Remove the chicken and potatoes from the cooker.
Drizzle the chicken and sweet potatoes with the cooking liquid. Top with fresh thyme if desired. Enjoy!
