Smoothie Bowl

Having a smoothie for breakfast to “break your fast is an excellent way to start the day! It’s easy on digestion, tastes delicious, and is super easy to make. This is one of our favorite smoothies to make and we LOVE to top with granola for some added crunch. Note: this recipe makes a thick smoothie, but if you wanted it thinner, just add water or more nut milk.

For the smoothie:

1 handful of organic spinach

1 cup of liquid (water, almond, or coconut milk)

1 cup of frozen berries

1/4 frozen banana

1 TBS whole flax seeds

Optional: Protein powder add in. This is my favorite brand, it has vitamins/minerals and proteins as well!

For the granola:

1 cup oats (for grain-free granola sub unsweetened shredded coconut)

1 cup chopped pecans (or nut of your choice)

1 cup pumpkin seeds

1 cup sunflower seeds

1/3 cup melted coconut oil

1/4 cup honey or maple syrup

1/2 tsp salt

1 tbsp cinnamon OR 2 drops doTERRA cinnamon oil

For the smoothie:

Place almond milk, spinach and flax in the blender and blend till well combined. Now put in your frozen fruit and combine. Top with granola and enjoy!

For the granola:

Preheat oven to 325 degrees. Dump all ingredients into a large bowl and stir.  Pour onto a large pan, lined with parchment paper. Bake for 15 minutes, pull out to stir.  Bake 10 more minutes OR until golden brown.
