This is an amazing breakfast or snack idea especially when you are on Whole30. When roasting sweet potatoes, always cook extra to use for leftovers such as this sweet potato bowl!
Sweet potatoes – medium size
Chopped nuts such as pistachios
Preheat oven to 400 degrees. Wash each potato and prick 2-3 times with a fork or knife. Wrap each potato in aluminum foil, place on a baking sheet and into the oven. Roast until tender, approximately 45 minutes. Cook extras and store leftovers in the refrigerator. When ready to make your sweet potato bowl, remove skin and warm sweet potato in microwave for 40-45 seconds. Add the toppings you like and enjoy!
