2 medium sized sweet potatoes cut into small wedges or matchsticks
1 tbsp avocado or olive oil
Salt and Pepper
Preheat oven to 425 degrees F. Line a sheet tray with parchment. In a medium – large bowl toss sweet potatoes with oil to coat. Sprinkle with s and p. Spread sweet potatoes in single layer on prepared baking sheet, be sure not to overcrowd. Bake for approximately 30-35 minutes until tender and crisp around the edges.
