Taco night……one Simple step to make it a little healthier!
So we all have taco night from time to time, right?? Who doesn’t love Mexican food! Kids surely do! Why not have Mexican night at home and make your own tacos with your homemade taco seasoning (click here to see how).
– 2 lbs ground beef
– 1 tablespoon avocado or olive oil
– 3 tablespoons homemade taco seasoning
– 2 tablespoons tomato paste
– 1 1/4 cups water
Heat a medium-sized skillet on the stovetop over medium-high heat. Add the oil and then the ground beef. Cook ground beef until browned. Drain on a paper towel to remove some of the oil and then return the meat to the pan. Add the taco seasoning and tomato paste and stir to combine for 1-2minutes. Add the water and reduce the heat to simmer and cook for 10 minutes until a thick sauce is created. Serve in hard or soft shell tacos or on a salad with all of your favorite toppings and enjoy!
Suggested toppings include:
Fresh diced tomato
Shredded sharp cheddar cheese
Sour cream (2% Greek yogurt is a great sub. Fage’ is my favorite brand)
