Spiced Coffee Cake

Ingredients:

Cake:

1 cup almond flour

1/2 cup coconut flour

1/2 cup canned pumpkin purée

1/4 cup honey

1/4 cup pure maple syrup

1/4 cup ghee or coconut oil

2 eggs

1/3 teaspoon salt

1 teaspoon baking powder

3/4 teaspoon baking soda

1 tablespoon cinnamon

2 teaspoons vanilla extract

5 drops dōTERRA ginger essential oil

1/4 teaspoon all spice

1/8 teaspoon nutmeg

Topping:

1/2 cup rolled oats

1/8 cup pure maple syrup

1 tablespoon ghee or coconut oil, melted

1 teaspoon cinnamon

2 tablespoons raisins

1/4 cup chopped pecans

Pinch of salt

Directions:

Combine all cake ingredients in a blender. Place in a 9 x 9 pan that has been sprayed with cooking spray. Next, place all topping ingredients in a bowl and stir to combine. Place on cake layer and spread evenly. Bake on 350 degrees for 30 – 40 minutes or until a toothpick comes out clean. Slice and serve warm with a cup of Joe!
