Whole Wheat Waffles

Who doesn’t love breakfast?? In our house, breakfast for dinner is a weekly event! The kids love to help make these waffles and you can feel good about eating and serving something that is hearty and nutritious!


– 2 eggs
– 1 ¾ cups buttermilk (regular milk or almond milk will work too)
– ¼ cup coconut oil, melted (canola oil (Non-GMO)  will work too)
– 1 tsp vanilla
– 1 ½ cups whole-wheat flour
– 1/2 teaspoon baking soda
– 2 teaspoons baking powder
– 1/2 teaspoon salt


Preheat your waffle iron.  In a medium bowl, combine all dry ingredients.  In another bowl, combine wet ingredients. Add wet ingredients to dry and mix just until combined.  Once your waffle iron is hot, brush with a small amount of coconut oil and add batter.  Use your waffle iron directions for the amount.  Serve with pure maple syrup and fresh berries if you have them!!
