WHY would you want to soak and cook your own beans you might ask??

Soaking your own beans is simple, healthy, and more affordable.  Buying and soaking dried beans eliminates the sodium and preservatives found in canned beans. BPA, a common ingredient in the lining of canned foods, has been directly linked to cancer. Dried beans are also approximately 40% cheaper than canned beans on average. Soak beans and store in zip lock bags, freeze and enjoy in a multitude of dishes!

Here ‘s how it’s done:

2 cups of dried beans = 6 cups cooked

Rinse beans to remove any dirt.

Bring 6-8 cups of water and 2 cups of dried beans to a boil.  Boil for 3-5 minutes.  Turn heat off, cover, and let sit for one hour.

Drain beans and add fresh water (8-10 cups) and beans back to the pot.  Simmer for 1.5 – 2 hrs until desired tenderness.  Do not stir often to avoid breaking the skin on the beans.

Once the desired tenderness is reached, drain beans and let cool.  Once cool, add 2 cups to each zip lock bag and freeze for up to 4-6 months.
